I got a ps3 kiosk from gamestop that was just missing the controller holders but it was so big and heavy I couldn't use it were I wanted to but ended up selling it for $135 so not bad.
The bracket on the right is for holding a guitar hero live controller.

To my understanding, the adapter that you are referring to should be there to provide power and the jack that is attached to that is just to mute the sound. With the setups that I have seen in game store, I don't remember seeing a kiosk where a vita was attached that had sound. Hope this helps you out.
Super nice find, and I'm jealous. I recently picked up a Dreamcast kiosk from a former Eb games manager for $30 bucks! Had the TV and remote but no console. It was aged (color fading) so I refurbished it by painting it with car paint (black), adding some red led lights where the console goes, and adding vinyl dreamcast decals on the sides. Wish I could send you a picture, but its not for trade though! 🙂
